I've been sending out a (not as regular as it should be) newsletter for over a year now, but my resolution for this year is to really get organised with newsletters and send them once a month. I've drawn up a list of topics to include in each one, depending on what's seasonal etc, and obviously they'll be things to put in as each one comes along, such as new stock etc.

I want to be able to include an offer exclusive to subscribers in each newsletter. I've already got voucher codes and restricted entry prize draws, but what other offers could I use to keep it interesting?

How about referral bonuses, so that previous customers are rewarded for bringing you their friends and family, 5% off for them for a set period of time increasing by say 1% per additional paying customer they bring you, or an increasing value voucher code the more people they refer the greater the value of $ they get, which they can redeem at any time on future purchases (or you may even want to just give them a cash value reward).
