I am trying to find a work from home opportunity where I can earn a little supplemental income, however I am looking for one with fairly low start up costs. Any suggestions? I am a stay at home mom during the day but work evenings and Saturdays. I am great with numbers and the computer.

Have you tried selling things on Ebay or online?
You can start almost for free, just register with Ebay or oztion, or any online auction / sales portal, and try selling some stuff from around the home that you no longer want or need.
Sometimes a look around the home or garage can get you started on a whole new business and it will cost you very little.

Some things you could do from home, or at least from a home based office, include:
- catering
- photography
- classes, if you have a proficiency - art, music, etc.
- writing
- typing
- transcription

Hi selling at online auction sites is a great and inexpensive way as AFashionableLife mentioned and I recommend Oztion because there are no listing fess you only pay for extras like bold or featured and a final fee at the sale.
My wife and I have a vShop on Oztion selling my wife's hand crafted jewellery and it cost from just $5 a month. We have also just recently joined a business opportunity selling consumables, cosmetics, health and beauty products and many other household items and that has a very low start up cost.
If you want to earn a little extra cash then there are many paid survey sites that are genuine but it takes a bit of time to earn this way and most people will not be able to make a living from it.
Lots of people make money from blogging by monetizing their blogs and there are many sites like Squidoo and HubPages that you can earn royalties from creating pages with content
